Prototype Development and Shelf Life Optimization for Arepas

Las Reinas

Prototype Development and Shelf Life Optimization for Las Reinas’ Arepas – Las Reinas is partnering with the George Brown College Food Innovation & Research Studio (FIRSt) to develop three gold standard arepa recipes. Las Reinas, a Toronto-based start-up and Latin-inspired food products brand, focuses on offering healthy ready-to-eat and pantry products.

Arepas are traditional South American savory white corn flour cakes that can be eaten either stuffed like a pita, or topped with protein, cheese or vegetables. George Brown researchers include Robert McCurdy, M.Sc., Applied Research Food Scientist, FIRSt, Candace Rambert, Culinary Technician, FIRSt, and one Student Researcher from the Culinary Management program.
