Dale and Marianne Donaldson founded the business in 1985 and originally sought to develop a niche market for geese and ducks in Ontario. The business has grown over the years as the Donaldsons built a provincially inspected poultry processing plant and they now process 200,000 geese and ducks annually for sale in markets in Southwestern Ontario.

Zpirit Foods Inc. (Zpirit) is a Toronto-based start-up company that has developed a line of healthy flavoured beverages called FruitWater. The FruitWater beverages are developed using a mix of whole fruits, water, and spices designed to appeal to the emergent demographic of young, urban and ultimately health-conscious consumers between 23-30 years of age.

Community Nutrition Teaching Model for Ethno-specific Diabetes Education, Recipes and Prevention
Faculty from the Centre for Hospitality and Culinary Arts are working in collaboration with the West Toronto Diabetes Education Program (WTDEP), community health care centres and the Canadian Diabetes Association (CDA) on developing recipes for the Community Nutrition Teaching Model for Ethno-specific Diabetes Education and Prevention project.
